For the cabbage soup with celery, cut the cabbage head in half, remove the stalk and cut into speckles, peel the celery and cut into small cubes, peel the onions and also cut into speckles.

Heat the olive oil in a large pot, sauté all the vegetables in it, add the tomato paste, paprika powder and caraway seeds and sauté briefly.

Deglaze with a dash of white wine vinegar, pour in vegetable soup and simmer for about 20 minutes with the lid closed – the cabbage should still have bite.

Season the cabbage soup with celery with salt and cayenne pepper and serve.
