For the spinach cutlets, boil the fresh spinach briefly in a little salted water, rinse with cold water and pat dry. If frozen spinach is used, defrost it and pat dry as well.

Salt the cutlets and fry them in oil or butter. Spread the spinach on the cutlets and place a slice of ham and cheese on top.

Place the cutlets in a pan, pour some soup over them, cover and let them steam for a few minutes until the cheese has melted.

Cut the mushrooms and saute them in the remaining drippings. Deglaze with cream and season with salt and pepper.

Pour the sauce over the finished spinach cutlets and serve hot.
