For the spicy garlic, peel the garlic cloves. Finely chop the herbs. Put all the ingredients except the olive oil in a pot and bring to a boil. Simmer for 3 minutes. Remove from heat and let stand, covered, for at least 4 hours – preferably overnight. The next day, bring to a boil again and simmer for 4 minutes. Lift out the garlic cloves with a perforated scoop and layer in carefully cleaned jars. Pour the hot broth over them – the garlic cloves must be completely covered with the broth. Let cool and finish each jar with a little oil. Seal immediately and store in a cool, dry place.
