Cut the pumpkin in half lengthwise, peel and remove the seeds. The 2nd half is not needed. Grate the pumpkin, salt, squeeze after 45 min (this is best done between both hands, without implements). The juice is not needed. In a large saucepan make roux from light butter and flour. Peel onion, cut into cubes and sauté. Add the bell bell pepper. Pour in buttermilk. Add pumpkin. Simmer on low heat for about 1 hour. Stir a lot! Before serving, add a little cinnamon and whipped cream.
