Cut the fried chicken breast fillets into very fine cubes. Put the chicken meat with the minced beef , the sherry and the eggs in baking bowl and prepare into a quantity. Bind with breadcrumbs as needed. Season the mixture with salt and pepper. Chop the ham into very thin slices.
Grease a baking dish with lard. Fill the minced meat mixture and the ham in layers into the form. Close the baking dish, place it in a water bath and bake in a heated oven (electric oven: 180 °C / convection oven: 160 °C for 1 1/2-2 hrs. Remove the mold, cool the pâté, weigh it down and press it for 2-3 h. To serve, cut the pâté into slices and sprinkle with sprigs of herbs.
