For the oven fries, peel potatoes and cut into strips about 1 cm wide. The strips should all be about the same size so they are even and cooked through at the same time.
Place potato strips in a bowl and mix well with the salt and canola oil. Line a baking tray with baking paper and spread the potato strips on it, preferably so that they do not touch.
Preheat the oven to 180 °C and bake the fries for 15 minutes. Turn the potato strips over and bake for another 10 minutes.
Finally, turn up the oven to 250 °C and and crisp for 5 minutes. Remove the oven fries from the oven and let them “drain” on 2-3 sheets of kitchen roll.
