For the motif cake zoo, separate eggs.
Beat egg whites to snow. Beat egg yolks, powdered sugar and vanilla sugar until foamy and gradually add water and oil. Mix flour with grated walnuts and baking powder and stir into the yolk mixture. Finally, fold in the beaten egg whites. Grease and flour the cake pan (diameter 26 cm). Pour in the batter and bake for approx. 50 minutes at 180 °C.
For the white chocolate buttercream, boil whipping cream and add the coarsely chopped white chocolate, wait about 1 minute, mix everything well and let cool. Beat butter for about 10 minutes until fluffy and stir in the cooled chocolate mixture.
Cut the cake twice crosswise and fill with the buttercream. Spread apricot jam all around the cake. Knead fondant until soft and cover the cake with it.
Decorate the zoo motif cake with zoo animals you have modeled yourself.
