For the melon in port, cut the melon open so that you can lift off a lid. Using a small spoon, scoop out all the seeds. Then scale the flesh, but leave it in the fruit. Fill to the top with port wine.

Leave in the refrigerator overnight, then divide the melon scales among 4 glass bowls, pour some of the port wine over them and serve the melon in port very cold.
