Salmon in Riesling Cream Sauce with Fresh Arugula Pasta

Try this delicious pasta dish:

Sauté onion with a little butter, add fish stock and Riesling, if it has a little finely chopped carrot and leek, simmer, reduce. Season with sea salt, ground pepper, the juice of half a lemon or lime, a pinch of sugar. Add whipped cream, reduce further.

Cook the pasta al dente according to the manufacturer’s instructions, do not forget the salt. Drain the pasta in a sieve (do not rinse) with a handful of coarsely chopped arugula without stems, place in a frying pan with a little olive oil and a little butter form, toss if necessary, season, ready.

Form two pieces of salmon fillet of about 90 grams without skin in the almost ready Riesling sauce and about three to four minutes, each according to the thickness of the fish fillet, very slightly lightly billow.

Place the salmon fillet on the hot plate (perhaps keep warm), briefly bubble up the Riesling cream sauce, stir in the very cold butter flakes with a whisk (this further binds the sauce), add the kitchen herbs.

Pour the sauce over the fish, add the rocket noodles.
