For the Hugo Sorbetto, add syrup to the water to make very sweet juice. Squeeze the lemon and add with Prosecco.

Put in the ice cream maker or freeze and stir every 30 minutes. Beat egg whites with sugar until stiff and fold into sorbet. Pour into cocktail glasses and garnish the Hugo Sorbetto with mint.
