Clean and rinse the leeks. Cut one piece per roulade (each 5 cm thick) into small pieces and pre-cook in boiling hot salted water for 3 min. Season roulades on both sides with salt and pepper, rub the insides with mustard. Place leek pieces on top of roulades, roll up meat, pin with a toothpick.

Fry roulades in hot oil on all sides, add stock and wine, cover and simmer for 1 1/2 hours.

Cut remaining leek into pieces and sauté in butter/light butter. Season with salt and pepper, cover and cook for 10 minutes. Remove roulades from stock and remove toothpicks. Sprinkle in sauce binder, let bubble up and fold in crème fraîche. Season sauce with salt and freshly ground pepper to taste. Serve roulades with leek and sauce.
