For the hearty potato goulash with sausages, clean the peppers and carrots, cut them into small pieces and set aside. Peel potatoes, wash and cut into pieces about 3 cm.

Peel onions, wash, dice and fry in hot vegetable oil. Add potatoes, chili pepper and garlic and fry for 2 minutes. Stir in tomato paste, sprinkle thyme, rosemary and paprika powder and fry briefly. Add the vegetables and crushed tomatoes. Pour vegetable soup and red wine over it.

Bring the potato goulash to the boil once, reduce the heat and simmer with the pot closed for about 40 minutes. Cut the sausages into slices, add them to the potato goulash and let them stew for another 10-15 minutes.

Finally, season with salt, pepper and sugar and serve in deep plates. Sprinkle the hearty potato goulash with sausages with parsley.
