Instructions:

For the ginger liqueur, first put ginger with brandy in a jar and close well. Leave to infuse for 1-2 weeks, shaking it up again and again.

Then strain the ginger through a sieve and put it in a pot with honey and water and bring to a boil. Allow this mixture to cool and add back to the brandy. Leave to infuse for 2-3 weeks.

Then strain through a sieve (with a muslin cloth or coffee filter) so that the ginger liqueur is as clear as possible. But it may still remain a little sentence.
