For fried melanzani in Indian yogurt marinade, wash the melanzani and cut into slices about 1 cm wide. Cut thicker melanzani still in half lengthwise.

Mix turmeric with salt and rub the melanzani with it or put it in a freezer bag and shake everything well. Let rest so the water can drain out, then pat the melanzani well.

Fry the melanzani in a pan with ghee on both sides until browned (about 2 minutes on each side). After lifting them out, place them on paper towels.

Mix the yogurt with sugar, chili powder and salt, add some more ghee and the yogurt mixture to the pan and mix well. Add the melanzani back into the yogurt marinade and simmer on low heat for about 10 minutes until the melanzani are quite soft.

Serve the fried melanzani in Indian yogurt marinade sprinkled with cumin seeds.
