A great pasta dish for any occasion:

Peel shallots, dice very finely. Coarsely crush the coriander. Clean leek, rinse, coarsely chop with parsley. Boil water (1) with prepared dill, ingredients, salt and lemon slices for 5-6 min. Pour in salmon and boil down. Boil salted water (2) with oil. Cook pasta in it until just cooked according to instructions.

Lift salmon out of broth with skimmer, drain and wrap tightly in aluminum foil. Pour the broth through a sieve. Sauté shallots in 1/5 of the butter. Add gravy and whipping cream, cook for 5-6 min. Coarsely chop salmon without skin and bones, rinse caviar, drain in sieve. Stir remaining cold butter into sauce in small flakes and season with vermouth. Arrange drained pasta. Spread salmon, sauce and caviar evenly on top and bring to the table on the spot.
