Arabian Lamb Chops with Spiced Rice

Instructions:

For the lamb chops with spiced rice, first peel and chop the garlic. Wash and chop the carrots, leeks and zucchini. Remove the seeds from the dates.

Fry the rice in clarified butter. Add cinnamon, allspice, cloves, cardamom and salt. Add a liter of water, bring to a boil and simmer for about 15 minutes.

Sauté garlic and mint. Add salt to taste. Heat the yogurt and add the mixture. Bring to a boil and then add the curd. Whisk with a hand blender and set aside.

Heat the olive oil and sauté the carrots in it. When they are already softened, add the zucchini. At the end, add the leeks as well. Let it cook until the vegetables have softened. This takes about 10 minutes. In between, add salt, pepper and season with cardamom and cloves.

For the lamb, again heat oil in a pan and fry the chops in it.

Arrange the lamb chops with spiced rice and serve with the yogurt sauce.
