Bavarian Roast Pork

Rub the meat with salt and put it in the pan of the oven with the pork rind down. Pour a quarter of a liter of water and roast at 225 degrees. After 15 minutes, turn the roast to the other side and score the pork rind crosswise. Insert cloves into the cuts and continue roasting for 45 min, basting frequently. Then add the onion, bay leaf spice, greens, peppercorns and garlic clove. Roast everything for another 10 minutes, basting the pork rind with salted water so that it becomes quite crispy. Keep the meat warm. Thicken the stock with a tsp. cornstarch and season with salt and pepper.
