(*) Ingredients for 1 pie dish with 28 cm ø Sift flour and salt into a suitable bowl. Make a well in the center. Put butter or light butter in a saucepan with the water and bring to the boil. Pour the mixture into the bulge in the flour and stir quickly until a smooth dough is formed. Wrap the dough in cling film and cool a little. Preheat the oven to 200 °C.

Cut the ham into very fine cubes. Clean, rinse and drain the gooseberries (rinse the Boskop, remove the skin, cut into quarters, remove the core and cut the apple diagonally into slices). Peel and coarsely dice the onions. Rinse and dry the parsley and chop the leaves. Roast the mince with half of the ham cubes in a coated frying pan without fat, stirring, until it takes on color. Remove from frying pan, mix with hazelnuts, onions, parsley, gooseberries and sour cream, season heartily with salt, pepper and new seasoning.

Roll out 2/3 of the pie dough and spread the bottom with it, pull the edge up and prick the bottom several times. Spread the amount evenly in the mold, tipping the edges of the dough inward and brushing with egg.

Roll out the rest of the pastry dough, place on top as a lid, decorate and brush with egg. Cut a hole in the lid.

Put the pie in the hot stove (middle rack) form and bake for about 30 min.
