Instructions:

For the vegetable curry, cut the vegetables into cubes. Finely chop the garlic and pepperoni or chili. Put all ingredients in a large enough pot and simmer with lid on for about 15 minutes, stirring occasionally.

Meanwhile, prepare the rice according to package directions. Season curry with salt and lemon juice. Divide the rice between two plates, ladle curry on top and serve sprinkled with parsley.
