Instructions:

For the One Pot Vegetable Rice, chop mushrooms, vegetables, garlic and ginger and place in a pot with rice, soy sauce, agave syrup and peanut butter. Pour vegetable soup over, bring to a boil and simmer with lid on for 10 minutes.

Meanwhile, cut the smoked tofu into small cubes, grate the lemon zest and squeeze the lemon. Mix tofu cubes to the rice and simmer for a few more minutes.

The rice and vegetables should be cooked and most of the liquid cooked off. If necessary, remove the lid towards the end of the cooking time, or add a little more water.

Mix in the lemon zest and season the rice with the lemon juice, soy sauce and salt if desired.

Sprinkle with fresh, chopped herbs before serving.
