Cut the cooked or fried chicken meat into very fine cubes. Heat the olive oil with the butter in a saucepan and stir in the flour with a whisk. Pour in the hot milk, add the chicken meat and cook, stirring continuously, until thick. Season the quantity with salt, pepper and nutmeg. Remove the saucepan from the stove and leave to cool for 2 hours. Then, with floured hands, form croquettes from the mixture. Turn the croquettes first in the beaten egg on the other side and then coat them with breadcrumbs. Heat the olive oil in a frying pan and fry the croquettes in it until golden brown. Remove and bring to the table.
