For the winter beet gin and tonic, first finely dice the beet and leave to infuse for a week with the gin, cinnamon stick and cloves in a well-sealed container.
Shortly before serving, fill ice cubes into glasses and pour a little of the prepared gin over each (without beet pieces and spices). Top with tonic to taste.
Winter Beetroot Gin Tonic is served with a cinnamon stick and freshly grated nutmeg.
