This is a quite wonderful grandmother’s recipe that shows how old bread, pasta and cheese can be turned into a feast.

Cook the pasta in salted water for eight to eleven minutes until al dente.

Meanwhile, warm the butter in a frying pan and fry the breadcrumbs on a low fire until brown.

Then arrange the hot, drained croissants in layers with the grated cheese in a baking dish and sprinkle with the crispy breadcrumbs.

Serve with a leaf salad or – very traditional – apple puree.
