Pasta dishes are just always delicious!

Sift the flour into a suitable bowl. Salt, squid ink, eggs and a dash of olive oil mix well, add to the flour form and knead into an elastic pasta dough. Leave to rest for 1 hour. Then either process in a pasta machine or (if no pasta machine is available) roll out thinly on a generously floured surface with a pasta roller and cut tagliatelle into small pieces with a kitchen knife.

Cook in 4l salted water for 2-3 min (depending on the thickness of the pasta).

Use disposable gloves from the pharmacy to knead the pasta dough. This saves washing your hands, because the ink can be quite clingy.
