Cinnamon Waffles with Mulled Wine Cream

For the cinnamon wafers with mulled wine cream, wash the orange and lemon well and then dry them. Grate the peel with a grater. Cut the orange in half and squeeze.

Beat the eggs and separate them. Set egg whites aside. Whip the cream until stiff and refrigerate.

Reduce red wine by half over low heat and let cool.

Whisk egg yolks and add to red wine. Add 1 tsp each orange and lemon zest, sugar, mulled wine spice, cinnamon stick and cloves and heat everything while stirring constantly and let it boil up once. Then remove from the heat and remove the cinnamon stick and cloves. Prepare the gelatine according to the package instructions and mix it into the mulled wine mixture.

To obtain a particularly fine cream, now press the mixture through a kitchen sieve and whip over ice water until nice and frothy. Add the orange juice and finally fold in the stiff whipped cream. Allow the mulled wine cream to set in the refrigerator.

In the meantime, prepare the waffles.

Melt the butter. Mix sugar, vanilla sugar, flour, spices, egg whites and butter until smooth. Let it stand for some time.

When the mulled wine cream is nice and firm, bake the waffles out. To do this, heat the waffle iron. Grease with oil, spread the batter and bake the waffles with the lid closed. Before serving, either fill the waffles with the mulled wine cream or decorate them on the plate. Sugar the cinnamon waffles over the top.
