For the rice noodles with chicken, peel the carrots, ginger and garlic. Cut the ginger into small cubes and the garlic into thin slices. Cut the carrots in half lengthwise and thinly slice crosswise. Halve pak choi lengthwise, then cut crosswise into 1 cm wide pieces. Cut shiitake into quarters or sixes. Cut chicken fillets crosswise into slices about 2 cm thick, salt and pepper. Bring plenty of salted water to a boil, add rice noodles and cook over low heat for about 5 minutes. Empty noodles into a colander and drain. Heat oil in a non-stick pan and fry the meat in it all around. Mix in carrots and sauté until al dente. Add pak choi, shiitake, ginger and garlic and cook. Mix in noodles and add soy sauce to taste. Serve rice noodles with chicken and enjoy.
