Instructions:

1. boil long grain rice with half of the lime juice and zest, pineapple juice, water and saffron. Swell at the lowest temperature for 20 minutes. Then cool completely.

Fill the long grain rice into a tartlet mold. Turn out and place the tartelettes on a plate. 3.

Mix honey with remaining lime juice, zest and sesame seeds and drizzle over rice balls. Garnish with mint and bring to table chilled.
