For the plum fondue, first finely puree the plums in a blender, add to the fondue pot with the sugar and cream and blend over low heat, stirring constantly until a uniform mass is formed.

Mix cornstarch with plum water, add to the plum fondue, stir well and bring to the boil again briefly.
