For the Stuffed Chicken with Fruity Sauce, rub the chicken inside and out with salt and pepper.

Peel and quarter the apples and cut out the core.

Drain the sour cherries from the jar, reserving the juice.

In a bowl, mix the sour cherries, sour cherry juice, apple quarters, applesauce and chestnuts.

Stuff the chicken with the fruit mixture.

Place in a roasting pan and brush with melted butter.

Cover and roast in the oven for about 1 hour. Keep basting with the juices that have run out.

Put the lid of the roaster aside and roast the chicken open for the last quarter of an hour so that the house gets nice and crispy.

Remove the chicken from the roaster and let it rest.

Boil off the juices in the roaster with a little water, add in the remaining fruit and bring to the boil again.

Serve your stuffed chicken with fruity sauce with rice!
