For the dough, sift flour into a large baking bowl, salt, Parmesan cheese, 3 tbsp olive oil and crumbled yeast over the flour form. Add 300 ml of lukewarm water. Now work everything together thoroughly with the dough hook of the electric hand mixer.

Leave the dough to rise in a warm place with the lid closed until it has doubled in volume. Knead the dough on a floured surface for 5-10 minutes until it becomes elastic and bubbles. Then let the dough rise for another 20 minutes with the lid closed. Preheat the electric stove to 200 °C, spread the baking sheet with parchment paper or grease it. For the topping, cut the mozzarella into pieces, finely crumble the blue cheese and coarsely grate the Manchego. Knead the yeast dough repeatedly until hearty and shape into an oval or round patty, place on the baking sheet. Sprinkle the various cheeses on top and press lightly into the dough. Then let the patty rise for 10 min with the lid closed. Then bake in the middle of the oven for 50-60 min (gas: level 3) until its surface is nice and golden brown.
