Instructions:

For the pancakes with spinach and feta, first bake out pancakes according to the basic recipe.

Put a pot on the stove, cover the bottom with water and bring it to a boil.

Clean the spinach leaves and cut away any coarse stems.

Gradually add in as much spinach leaves as you can fit in, waiting for the spinach to collapse a bit. This will not take long. Then set the spinach aside briefly.

Heat olive oil in a frying pan and sauté onion and garlic.

Add the spinach leaves and carefully mix in the feta.

Season with salt, pepper, nutmeg and oregano.
