Cut the salmon into strips and arrange on a plate. Dice the tomatoes and spread evenly on top. Cut the spring onions into rings and spread evenly on top. For the dressing, mix the remaining ingredients and pour over the fish. Cover the plate with cling film and marinate in the refrigerator for at least 1 hour. Serve with brown bread or pumpernickel wedges.
