Rinse the apples, quarter them, remove the cores and cut the apple quarters into thin slices. Grease a gratin dish with butter. Put the apple slices in it and drizzle with the maple syrup. Preheat the oven to 180 degrees. In a baking bowl, mix the cornmeal with the salt. Melt the butter, do not let it brown, and let the honey melt in it. Stir a good half of it with the Swedish or sour milk. Keep the rest. Pour the Swedish curd mixture over the cornmeal, stir everything together until well combined, and spread evenly over the apple slices. Stir the juice of one lemon into the remaining butter and honey mixture, drizzle over the casserole, and bake on the second rack from the bottom until golden brown, about 1 hour. Bring to the table hot.

The casserole should be baked in the oven with a mild flavor and finer grain.
