For garnish:


Whip egg yolks and 1 tsp. juice of one lemon in a high mixing bowl with a hand-held whisk. Whisk in oil drop by drop, then in a thin stream. Lightly whip the whipped cream. Fold into the mayo, season to taste.

Coarsely chop walnuts, except for 4 halves. Remove peel from celery and rinse. Rinse apples, perhaps removing peel. Quarter and core. Cut both into fine sticks. Drizzle with 2 tbsp juice of one lemon.

3. loosely mix prepared salad ingredients and mayo and season the leaf salad. Arrange in glasses or hollowed out apple halves. Garnish with apple slices, celery greens and the walnut halves.
