For the homemade pasta with mussels first prepare the pasta dough.
To do this, whisk the eggs with the salt (for the pasta dough without eggs, just knead the ingredients well), make a well with the flour on a work surface and mix the eggs in it with the flour.
Knead a smooth dough with the heels of your hands. If the dough is too dry, just add a few tablespoons of water.
Roll out the dough thinly and shape into different shapes such as: Tagliatelle or Spaghetti. Then cook for 2 to 3 minutes in lightly boiling salted water.
Soak the mussels well and remove the beard. Peel the shallots and garlic and finely dice both as well as the celery, finely chop half the chili pepper.
Heat some olive oil in a wide pot, sauté the vegetables until translucent, add the mussels and deglaze with white wine and tomato pulp.
Cover and let them steam for about 3 minutes, add the gin and season with salt, pepper and some lemon juice.
Toss the cooked pasta with the mussel sauce once, arrange on a deep plate and garnish the homemade pasta with mussels with a few basil leaves.
