Peel the shallots, dice two of them and chop one very finely.

Rinse the orange thoroughly, dry it and grate it. Squeeze the lemon and boil the juice to half. Rinse the mussels thoroughly.

Heat oven broiler to 300 degrees.

Do the mussels in a large saucepan with the 2 diced shallots, the wine and a tiny bit of pepper at high temperature with the lid on for 6-8 minutes. Mix butter, reduced juice of one lemon, bread crumbs, finely chopped salt, pepper, shallot as well as the grated orange peel to a paste.

Remove the empty half of the shell from the cooked mussels and spread the butter mixture on the meat in the other half.

Broil these on a baking sheet under the broiler for about 3 minutes.

Arrange on plates and bring to table sprinkled with parsley Tip:

Use only live mussels for cooking. Therefore, when mussels are already open, tap lightly on the shell, if they close repeatedly you can do it. Pick out the ones that no longer move.
