For the ham parmesan muffins, heat the oven to 175 °C. Cut the ham into cubes. Mix the flour, baking powder, salt in a bowl.

Whisk the eggs in a second bowl, stir in the oil, ricotta and add the ham and parmesan. Season to taste.

Sift the flour mixture over the top and mix with a spatula just until everything is well combined. Line a muffin tray with paper cups and fill the mixture into each up to 2/3 full.

Sprinkle with grated Parmesan and bake for about 20-25 minutes.
