For the bacon and cheese muffins, grease a muffin tray or place paper cups in it. Cut the bacon and onion into small cubes and meanwhile melt the butter.

Sift flour and baking powder into a bowl and mix in nutmeg. In a small bowl, mix the egg, milk, and cooled butter well and stir this mixture into the flour mixture.

Stir just until ingredients are well combined.(Be careful not to let the butter get too warm). Now add bacon, cheese and onion and stir briefly.

Pour a good tablespoonful of batter into the muffin cups and bake the muffins at about 200°C for 15 – 20 minutes until golden brown. Remove the muffins from the oven and let them rest for about 5 minutes.
