Cook rice for the Greek herb rice. Wash and slice tomatoes and zucchini. Place alternately side by side in a large non-stick skillet and heat, covered, for about 3 minutes.
Dice feta, turn vegetables, place cheese cubes on top and continue to cook over low heat for another 1-2 minutes. Add cooked rice, herbs and 1 tablespoon water to pan and toss briefly over high heat and serve with tomatoes. Serve the Greek herb rice.
