For the ginger ribbon noodles with zucchini vegetables, first sauté the finely chopped onion in olive oil until translucent.

Fry crushed garlic cloves and finely chopped bell bell pepper. Cut the zucchini into small cubes and fry them as well.

Halve the tomatoes, add and simmer – season with thyme, salt and cinnamon basil.

Cook the ginger ribbon noodles according to instructions until al dente and serve together with the zucchini vegetables.
