For the Crêpes Suzette, first prepare the crêpes:
Mix milk, salt and sugar, add eggs and mix properly. Add a third of the milk and stir well. Add the cream and stir in the remaining milk. Flavor with orange liqueur. Cover and let rest for at least an hour.
Bake small, narrow crêpes in a frying pan. (This mixture should yield about 18 crêpes – 3 per person).
Whisk together the sugar, butter and orange liqueur.
Heat the freshly squeezed juice of 2 oranges in a frying pan and let it reduce a bit. Stir in the butter sauce and bring to a boil.
Dip the crêpes Suzette in this sauce and serve folded into triangles.
