For the grilled tomato salsa, wash the tomatoes, remove the stalk and cut into small cubes. Wash the chili and cut into very fine rings.

Peel the onion and ginger and also cut into small cubes. Chop the herbs. Mix everything together and marinate with the juice of the lime, olive oil and balsamic vinegar.

Add maple syrup to taste, season with ground coriander, salt and pepper. Leave to marinate for half an hour and serve filled in small bowls.
