Cut the well cooled melons in half, remove the seeds, scoop out the flesh and mash. Season the puree with the squeezed juice of the lemons, brandy, salt and pepper. Whip the supee until creamy and bring to the table garnished with lemon balm.

A delicious refreshment for hot summer days.
