For the coconut biscuits, beat the egg whites with the salt until stiff. Slowly add the sugar. Fold in the coconut flakes and starch. Spoon small heaps onto a baking tray with baking paper.

Bake at 140 °C convection oven for approx. 20 minutes. The cookies should be crispy on the outside and juicy on the inside.
