For coconut biscuits, separate eggs and beat egg whites for 2-3 minutes until very stiff. Stir in the Xucker light until it melts a bit. Fold in about 200 g coconut flakes until you have a patty-like mixture.

Add more coconut flakes as needed. Form small balls with moistened hands and place on a baking paper. Bake for 20-30 minutes at 180°C until the coconut balls are evenly browned.
