For the potato omelet, boil the potatoes for about 20 minutes, peel and slice.

Fry the onions and bacon cubes in a little butter, add the potatoes and fry until crispy.

Mix the eggs with a little salt and pepper, mix in the cheese cubes and pour this mixture over the potatoes. Fry until the mixture has set.

Remove the finished potato omelet from the pan, garnish with parsley if desired and serve.
