Mix the mince with the garlic, ginger, salt and pepper and set aside for 15 minutes to infuse. Heat the oil and fry the onions until golden brown. Add the turmeric powder, the chilies and the meat and roast everything together for about 3-4 minutes. Then add the tomatoes and the water and cook at low temperature until the water has boiled away. Remove the quantity from the frying pan and divide into portions. Separate the yolks from the whites. Beat the egg whites well. Then add the yolks and mix everything together well. Add salt, pepper and coriander and mix well. Then divide the egg mixture into portions. Heat some oil in the frying pan and pour one unit of the egg mixture. The egg should melt evenly in the frying pan to form an omelet. When the egg has “set”, spread a portion of meat on top, fold the omelet in half and carefully place on a serving platter. The remaining portions are prepared in the same way and served hot.
