For the Chili Relish, coarsely chop the chili, also coarsely chop/chop the shallots and garlic. Place the chili, shallots and garlic in a pan with the sugar and heat, stirring constantly.
Once sugar begins to caramelize, add vinegar, simmer mixture gently over low heat for about 20 minutes. Once the chilies are soft and the mixture thickens, remove from the plate and sterilize the Chili Relish in jars or enjoy immediately.
