A simple but delicious cake recipe:
For the dough, mix flour with the cornstarch and baking powder and sift into a wide bowl. Add salt, sugar, egg and light butter. Mix the ingredients with a food processor fitted with a dough hook and work well on the surface, put to cool for 30 minutes. Place the dough on a baking sheet lined with parchment paper and roll out. Pre-bake at 200 °C for 15 min, take out to cool a little. Spread the drained cherries evenly on the base. Mix the cornstarch with a little of the milk. Bring the remaining milk to a boil with the sugar and vanilla sugar. Stir in the cornstarch and let it boil briefly. Stir egg yolks, curd cheese, juice of one lemon, stir into the hot pudding and let it boil again. Whip the egg whites with 1 tablespoon of cold water until very stiff, fold into the curd cream. Spread the curd cream evenly over the cherries. Brush the surface with the egg yolk milk. Bake the cake at the above heat for another 25-30 minutes.
Instead of cherries you can also use other fruits, e.g. peaches or blueberries.
