Remove the outer leaves from the chicory. Cut in half lengthwise.

Heat a little 0el with the butter in a wide frying pan until the butter bubbles. Fry the chicory with the cut side down until golden brown. Turn. Sprinkle with a little sugar. Season with salt and pepper.

Cover and roast over medium heat for 2-3 minutes. Lift out. Drain briefly on kitchen roll.
